Mini Gluten-free Brownies
Preheat oven to 350. Grease or line 16 mini muffin tins.
1/2 cup softened butter
1/4 cup cocoa powder
1 cup brown sugar
1 tsp vanilla
2 eggs
1/4 cup cornstarch
Pinch salt
Mix each ingredient in, in order.
Bake for 14-18 minutes.
To make it festive for St Patricks Day I made an "Irish" mint buttercream by whizzing up some fresh peppermint butter with icing sugar.
